Breakfast Tacos

Another easy recipe that can be made using mostly WIC-approved items.

Breakfast Tacos

Makes 6 tacos

  • 6 whole wheat tortillas*
  • 6 eggs, beaten*
  • 1 tablespoon of butter
  • 1/4 cup of shredded cheddar cheese*
  • Salsa, optional

Melt butter in a pan over medium heat and then add the beaten eggs, stirring continuously until cooked through and “scrambled.” Stir in the shredded cheese until evenly incorporated.

While eggs are cooking, heat up the tortillas one at a time in a pan over medium-high heat. Flip them over halfway through.

Distribute the cheesy eggs evenly among the warmed tortillas and top with salsa if desired.
